SATAY NOODLE SALAD
YOU’LL NEED:
- SALAD:
- 1 pack of vermicelli noodles
- 1 chicken breast, thinly sliced
- ½ sachet of Mingle’s Satay Recipe Base
- Ready-made coleslaw mix
- 1 carrot, thinly sliced
- 1 Lebanese cucumber, thinly sliced
- 2 sprigs of spring onion, thinly sliced
- 1/2 red onion, thinly sliced
- 1/2 fresh lime
- 1/2 avocado, sliced
- Fresh coriander, chopped
- SATAY DRESSING:
- ½ sachet of Mingle's Satay Recipe Base
- 1/4 cup peanut butter
- 2.5 tbsp water (with an option to add more for desired consistency)
- Juice of 1/2 fresh lime
- 3 tbsp soy sauce
- 1/2 tsp minced ginger
- 2 tsp chilli oil
SATAY SKEWERS
YOU’LL NEED:
- 500g chicken breast (cubed)
- Mingle’s Satay Recipe Base
- 3 tbsp soy sauce/tamari
- ½ sachet of Mingle's Satay Recipe Base
- 1/4 cup peanut butter
- 2.5 tbsp water (with an option to add more for desired consistency)
- Juice of 1/2 fresh lime
- 1/2 tsp minced ginger
- 2 tsp chilli oil
