Bring Spain to your kitchen with Mingle’s Spanish Paella – a hearty, spiced dish perfect for the cold months!
Ingredients
- 1 tbsp olive oil
- 1 large brown onion, finely chopped
- 2 garlic cloves, crushed
- 30 grams of Mingle’s Spanish Spice Blend
- 1 red capsicum, finely diced
- 1 1/2 cups white Arborio rice
- 400g can Italian Diced Tomatoes
- 1/2 cup of cherry tomatoes, sliced
- 2 cups chicken liquid stock
- 1 cup frozen peas
- 1/2 cup fresh flat-leaf parsley leaves, roughly chopped
- A big handful of prawns
Directions
Cook down onion and garlic until soft.
Add cherry tomatoes and capsicum. Cook for 2 to 3 minutes or until soft.
Add Mingle’s Spanish Spice Blend, cherry tomatoes, and stock to the pan. Stir well and bring to a boil.
Reduce heat to low, cover the pan, and simmer for 15 minutes, stirring occasionally, until rice is tender.
Add prawns and peas, cooking for an additional 2-4 minutes until heated through.
Sprinkle with parsley and serve your delicious Mingle Spanish Paella.
