Mingle's Marvellous Spinach & Ricotta Pasta Shell Surprise!

Ingredients
- 14-20 jumbo pasta shells (and a few extra, just to be safe!)
- Olive oil for drizzling

- 4 cups of spinach
- 340g of ricotta cheese
- 1 large egg
- 1 cup of shredded mozzarella
- 1/2 cup of grated Parmesan, plus extra for garnish
- 1 tbsp of fresh basil, thinly sliced, plus extra for garnish
- 1 tin of diced tomatoes
- 400g of Passata

- 1 grated zucchini

Directions
Set your oven at 190 degrees Celsius.
Boil those jumbo pasta shells just until they're firm and perfect for filling. Drain and let them chill.
Toss spinach, Mingle's Garlic and Herb seasoning, and a bit of olive oil into a pan. Sauté until the spinach is wilted and dreamy.
In a bowl, combine ricotta, sautéed spinach, egg, mozzarella, basil, and Parmesan. Ensure it's well-mixed.
In your chosen oven dish, mix diced tomatoes, passata, zucchini, and Mingle's Mambo Italiano seasoning.
Gently fill each pasta shell with your ricotta mixture and place them into the saucy oven dish.
Sprinkle with a generous handful of grated Parmesan and some freshly sliced basil.
Protect your dish with foil, and bake for 25 minutes.
After that, uncover and let it bake for an extra 10-15 minutes to get that crispy finish.
Plate up, add an extra sprinkle of Parmesan, and dive in!
