Ingredients
- Tassal salmon fillets (without skin)
- Mingle's Mexican Fiesta Taco Seasoning
- Soft tacos (mini) or wraps
- Avocado, sliced
- Fresh coriander, chopped
- 1 Tbsp sesame oil
- 1 Tbsp honey

Generous sprinkle of Mingle's Mexican Fiesta Taco Seasoning
- 2 Tbsp tamari or soy sauce
- 1 Tbsp ginger, minced
- Cucumber, diced
- 1/2 a red onion, finely chopped
- Tomatoes or cherry tomatoes, diced
- Fresh coriander, chopped
- Fresh lime juice
- 1 Tbsp mayonnaise or Greek yogurt
- 1 Tbsp Mingle's BBQ sauce

Directions
In a bowl, mix all the glaze ingredients.
Cut the salmon into bite-sized chunks and marinate them in the glaze mixture.
Combine all salsa ingredients in another bowl, give a good mix and set aside.
Place the marinated salmon in the airfryer and cook at 200°C for 7 minutes, until beautifully golden and sticky!
For the smokey BBQ sauce, whisk together all the ingredients in a bowl, adding a dash of lime for that zesty punch.
On each taco or wrap, layer avocado, the fresh salsa, salmon chunks, and a dollop of smokey BBQ sauce. Garnish with parsley and a squeeze of lime. Dig in and let the taco party begin!
