Ingredients

1 Sachet Mingle Chipotle Taco Recipe Base Sachet
500 g Chicken strips
1 Onion diced
1 Green capsicum cut into strips
1 Zucchini cut into strips
400 g Tinned tomato
50 ml Stock
2 Tbsp Extra virgin olive oil
Tortillas
Salad bits

Directions

Heat olive oil in a pan over medium high heat, add in onions & chicken. Cook until chicken is cooked through.
Add in veggies, cook for 2-3 mins then add Mingle's Chipotle Taco Seasoning, tinned tomatoes and stock. Mix & simmer for 15 mins.
To prepare your tacos, add chicken mixture to a tortilla and top with salad & salsa.
