Ingredients
- 1 x Rice paper sheet
- 1 x Large egg
- A handful of bean sprouts
- A handful of spring onion, chopped
- A handful of chives, chopped
- Mingle’s Everything Bagel Seasoning

Mingle’s Avo & Guac Seasoning
- Mingle’s Sweet Chilli Sauce
- Mayo for topping (as desired)
Directions
Preheat a non-stick skillet on high heat.
Carefully place the rice paper sheet on the skillet.
Sprinkle the rice paper with a handful of spring onion and chives.
Crack the egg directly onto the rice paper and quickly scramble it around to spread evenly.
Amp up the flavor! Sprinkle Mingle’s Everything Bagel Seasoning and Mingle’s Avo & Guac Seasoning over the egg. Add more spring onion and bean sprouts.
Drizzle the omelette with Mingle’s Sweet Chilli Sauce for that spicy-sweet kick.
Carefully fold the omelette in half and let it cook for a few minutes until the egg is completely set.
Transfer to a plate and garnish with extra bean sprouts, herbs, a drizzle of mayo, and an extra splash of Mingle’s Sweet Chilli Sauce.
