Ingredients
- Chicken breast (approx. 500g), cut into cubes
- Corn chips, crushed (around 1 cup)
- Mingle's Dill and Garlic Ranch seasoning (1-2 Tbsp, adjust to taste)
- 1 egg, beaten
- Gluten-Free Flour (approx. 1/2 cup)
- Greek yoghurt (1 cup)
- Mingle's Dill and Garlic Ranch seasoning (1 tsp or adjust to taste)

Popcorn Chicken Bites
Preheat the airfryer to 200 degrees Celsius.
Slice chicken breasts into bite-sized cubes.
Prepare three separate dipping stations: one bowl with beaten egg, a second with gluten-free flour mixed with Mingle's Dill and Garlic Ranch seasoning, and a third with crushed corn chips.
Start the dipping process: First, coat each chicken piece in flour, then dunk it in egg, and finally roll it in the crushed corn chips. Make sure each piece is fully coated at every stage for optimal crispiness!
Carefully place the coated chicken bites in the airfryer. Cook for 7-10 mins. Keep an eye on them; cooking times may vary based on your airfryer and how crispy you like them.
Once cooked to golden perfection, transfer to a serving plate.
Dill & Garlic Ranch Dip
In a bowl, mix Greek yoghurt with a dash of Mingle's Dill and Garlic Ranch seasoning. Stir well and adjust seasoning to taste.
Serve alongside the popcorn chicken bites and dip away!
