A weekly dinner rotation hero. With Mingle's Spicy Mexican, the whole family will be coming for more.
Ingredients

500g beef mince or plant based mince/tofu

1 can of black beans

1 carrot diced
-
2 onions diced
-
1 stalk of celery diced

1 green capsicum diced

1 red capsicum diced

1 400 g can of tomatoes

1 bunch of corriander chopped

3 tbsp of Mingle Spicy Mexican

1 400 g can of chickpeas
-
500 ml of beef or veg stock
-
2 tbsp of tomato paste

1 chili deseeded
-
2 minced garlic cloves
-
1 lime
-
1 300 ml tub of sour cream
Directions
METHOD
HEAT pan with olive oil. Sweat onions, garlic, chilli, carrots and celery until translucent.
ADD mince and brown. Once browned, add 3 tbsp of Mingle Spicy Mexican Seasoning and capsicum.
ADD can of tomato, stock and tomato paste - bring to a simmer. Leave bubbing for 25 minutes.
ONCE the sauce has reduced and thickened, add black beans and chickpeas. Cook for another 15 minutes. Once this time is up. Put the lid on the chili and leave to cool for 10 minutes before serving.
TOP with a sprinkle of coriander, a dollop of sour creme and a squeeze of lime.
