Mingle's Slurp Me Up Chicken Laksa

Ingredients

400g x Chicken Breast/Thigh, diced
400ml x coconut cream
500ml x chicken stock
20ml x fish sauce
1 x lime, juiced
100g x snow peas
100g x rice noodles
40g X Mingle’s Laksa Recipe Base
Chilli flakes (optional)
Dried shallots
2 x tbsp Coconut Oil

Directions

Cook rice noodles according to packaged instructions.
Dice up chicken breast, start to cook on a large fry pan over medium heat with coconut oil.
Add in Mingle Laksa seasoning. Cook until slightly fragrant (2 mins).
Chicken stock, fish sauce, chilli flakes, lime juice and coconut milk. Let simmer for 20 minutes at a low temp.
Add in snow peas and Bok choy so they are warmed through but still slightly crisp. Take off heat.
Divide rice noodles into 2 bowls, spoon the laksa soup over the top.
Garnish each bowl with dried shallots and fresh lime wedges.
