Ingredients
- 30 g Mingle Mellow Taco Seasoning

1 Onion diced

500 g Beef Mince

2 Tbsp Tomato paste
- 50 ml Beef stock
- 1 Zucchini diced

1 Large carrot grated

4-8 Tortillas
- Generous Sprinkle Mingle Guacamole Seasoning
Directions
- Heat oil in a pan and add in beef mince.
- Cook for 2-3 mins then add in diced onions. Cook until onions are fragrant.
- Add in tomato paste & Mingle's Mellow Taco Seasoning and mix through.
- Add in zucchini and carrot & cook for 2-3 mins then pour in stock and cook until all the liquid has absorbed and the veggies are soft.
Assemble your tacos by adding mince mixture to tortillas and topping with guac & veggies of choice.
