4 chicken Marylands (bone-in, skin-on)

2 tbsp Mingle's Lemon & Herb seasoning

2 tbsp olive oil 1 lemon (wedges)

3 garlic cloves (crushed)

2-3 fresh rosemary sprigs (extra for garnish)

Optional: baby potatoes, carrots, zucchini
Directions
Preheat the oven: Heat to 200°C (180°C fan-forced). Season the chicken: Rub chicken with olive oil, Mingle's seasoning.
Assemble: Place chicken skin-side up in a baking dish. Add garlic, lemon wedges, and rosemary around the chicken. Optionally, toss vegetables with oil and season, and add them to the tray.
Roast: Bake for 40-50 minutes until the chicken is golden and cooked through (75°C internal temp). Baste halfway with pan juices.
Serve: Rest chicken for 5 minutes, garnish with rosemary sprigs, and serve with roasted veggies.
