A delicious, hearty dinner that can be whipped up in 15 minutes!
Ingredients

400g udon noodles
- 1 sachet Mingle’s Japanese curry
- 4 garlic cloves (finely diced)
- 1 large onion (Finely diced)
- 250g mushrooms (diced)
- 240ml light cream
- 2 tbsp extra virgin olive oil
- Parmesan (Optional)
- Chilli flakes/chilli oil (Optional)
Directions
- Heat 2 tbsp of olive oil in a pan & saute onion, garlic and mushrooms until fragrant
- Add light cream, Mingle’s Japanese curry sachet then let simmer. (If sauce is too thick, add a splash of stock/water)
- Once simmering, add in udon noodles & mix until they are coated in sauce
- Serve with parmesan and/or chilli oil & enjoy
