2 kg whole chicken

1 lemon, juiced and zested

2 large onions, thinly sliced

4 tbsps butter

500g of roasting potatoes cut into quarters 2 cm chunks

1 tbsps of olive oil

4 tbsp Mingle's Hunny Mustard
Directions
Preheat oven to 200 C Melt butter in a bowl.
Add the zest & juice of 1 lemon + 3 tbsps of Mingle's Hunny Mustard seasoning.
Place the onions & potatoes at the bottom of cast iron dutch oven. Pour over olive oil & remaining seasoning.
Rub the slightly solidified butter mixture over the inside and outside of the chicken + under the skin above the breast.
Place on top of the potatoes in the dutch oven. Roast the chicken uncovered for 15 minutes. Then reduce the heat to 180 C and roast covered for 60 minutes.
Allow the chicken to rest for at least 10 minutes. Serve chicken with your potatoes & onions which should have absorbed all the juices.
