Ingredients

500g chicken breast (diced)
- Mingle’s Buffalo chicken recipe base
- 1 brown onion (diced)
- 200g spinach
- 3 spring onions
- 1 lemon (juiced)
- 1 red capsicum (sliced)
- 150ml of chicken stock
- 200g cream cheese
- 200g sour cream
- 1 tbsp tomato paste
- 150g grated cheese
- 50g butter
- 5-6 large potatoes
Directions
- Preheat oven to 180C
- Line a baking sheet, pierce potatoes with a fork then coat them in olive oil and place in the oven to bake until softened
- Heat butter on a pot over medium heat, add onion, tomato paste and mingle’s buffalo chicken recipe base & cook for 3 mins
- Add chicken and cook until browned. Add sour cream, cream cheese, lemon juice, stock and remaining veggies (excluding spring onion). Cook until the cheese melts. Lastly, shred the chicken pieces.
- Cut baked potatoes in half and scoop out the centers. Fill potatoes with buffalo chicken mixture, top with spring onions & cheese and bake for 25 mins.
- Serve with a lemon wedge and enjoy :)
